The Hampton Manor Team: It’s the personal touches that make your wedding day an intimate insight into who you are as a couple. What then are you, the foodie couple, to do? When it’s wine from a particular vineyard, a garden-led cocktail and diners feasting on fresh, British produce that tell a thousand stories about your love, then we think Hampton Manor might just be your venue come true.
The Manor is the home to Michelin-starred Peel’s Restaurant where food is inspired by the Victorian walled kitchen garden. The relationships the team build with farmers and fishermen allow them to gather the best produce from this island’s farms and shores. The cellars showcase handcrafted organic and natural wines and champion emerging British winemakers. Everything that the chefs bring to the table is honest, original and delicious. Brothers-in-law Rob and Steve are the chefs that run the adjoining Peel’s and Hampton Manor kitchens. Rob’s rigorous approach to flavour and commitment to the main ingredient on the plate results in fresh, seasonal dishes cooked using modern techniques. Meanwhile, Steve reinterprets these dishes to serve to larger tables of guests. This is a wedding breakfast that feels like feasting. Canapés like beetroot and goats cheese macarons, pigs cheek nuggets or truffle custard sandwiches set the tone for the rest of the day. These are followed by courses like salmon with basil, cucumber and horseradish, Aubrey Allen British beef with onions and bone marrow crumb and caramelised pineapple with coconut and rum to finish. Additional dishes include a seasonal garden course, fish course, amuse-bouche, pre-dessert and upgrades to prime cuts of ethically sourced British meats.
In the evening it’s all about feasting, with slow cooked pulled pork baps or chef’s take on fish and chips including triple cooked chips, tartar sauce and mushy peas. Richard Vaughan’s rare breed Middle White pig sausages become a gourmet hotdog lineup featuring toppings like ‘The Mexican’ with guacamole, salsa and chilli beef, or ‘The McManor’ with a secret McManor sauce and caramelised onions. Or, opt for The Royal Banquet; an assortment of prime beef cuts with salads, wedges, serious sauces and the option of infamous wagyu beef skewers and lobster tails. Meanwhile, the house wines are headlined by their innovative wine on tap system; handmade, craft juice is put into its keg in the vineyard. This ensures that every drop is vibrant, delicious and super fresh. More broadly the Manor’s wine menu champions natural winemakers. Every wine gives a true sense of place, letting the land and fruit speak for themselves...yielding that elusive expression of ‘terroir’. Their dedication to supporting British farming stretches over to their beverage menu as they pioneer English and Welsh winemakers. Nyetimber English sparkling is one of the upgrades available for your drinks reception and toast. However, the Manor’s beverage team are also on hand to ensure you’re sipping on your tipple of choice on your big day. Family owners James and Fjona Hill have created an ethos focused not just on great food and produce, but also on the art of hospitality. James explains where this mentality sprung from:
‘Growing up in my parents’ country inn, our staff and family shared a long table after every Sunday lunch service. We tucked into my Mum’s delicious roast dinner and finished with a game of rounders. It’s those kind of memories that have shaped our vision for hospitality. We’re in a very different home now but the spirit behind those moments lives on. It’s our team, with all their creativity and imagination, that makes the Manor what it is.’
