Why do we need a wedding cake?
You'll NEVER forget the cheers that raise the roof at the moment you cut your wedding cake. It marks the end of the ceremonial proceedings and kicks off the dancing; that's why it's a tradition that endures.
What makes your wedding cakes so special?
My luxury wedding cakes are decorative and full of character. They have been featured in Vogue, the Metro, Red Magazine, hundreds of international wedding blogs and even on Channel 4! I'm the only wedding cake maker in the UK that specialises in sculpted floral ganache designs. They're 100% edible and each one is designed to the clients' individual requirements.
What's the process?
I book a Zoom consultation with all potential clients to discuss their requirements in terms of size and design. I then draw up a sketch or two to give them an idea of how I imagine their cake to look, along with a price quote. Before taking a deposit I post a box of samples for them to try different flavours. If they wish to go ahead, I take a deposit (usually around £200) to secure their booking.
How do you create your designs?
I use specially-designed Italian palette knives to sculpt my floral cascades. I have trained for five years to be able to master this difficult technique and now teach students all over the world. Palette knife techniques are rapidly turning the world of cake design on its head, as the popularity of traditional fondant cakes dressed with inedible sugar flowers is falling.
Will the cakes melt in hot weather?
No. My ganache recipe is super stable. Unless a cake is left for a prolonged period in direct sunlight, they will remain in perfect condition for hours.
